HACCP skjema omtales ofte som IK-mat system. HACCP, eller «Hazard Analysis and Critical Control Point», er er en definisjon på prosesser virksomheten er pålagt å følge i forbindelse med håndtering av mat. Formålet er sikker og trygg håndtering av næringsmidler i alle ledd.
Skjemaer eller IK-mat system
For å gjøre det enklere på bedrifter å følge den lovpålagte HACCP-prosessen er det utarbeidet en rekke mer eller mindre standardiserte skjemaer for bruk i den kontinuerlige internkontrollporsessen. Dette er enkeltskjemaer, men ofte omtales dette som et IK-mat system (Interkontroll mat) fordi skjemaene er en del at et større system som skal sikre og dokumentere forsvarlig håndtering av mat i alle ledd.
